Affectionately known as Schar Bar, The Simon’s showstopping bar is home to the region’s most extensive amaro collection and rare-bourbon program, complemented by a curated selection of wine and beer.
Pair your drink with oysters, Ossetra caviar, or elevated small plates like truffle fries, Maryland Crab Rolls, or house-baked gougères. Each dish is designed to complement the bar’s spirit-forward focus, offering guests the perfect balance of refinement and comfort.
